Description

This Jamaican Banana Bread is more than just your average loaf. It’s packed with ripe bananas, a hint of warm island spices, and a splash of dark rum that gives it that unmistakable tropical flair.


Ingredients

  • 3 ripe bananas, mashed
  • ½ cup unsalted butter, melted
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp dark rum (optional, but recommended!)
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground allspice
  • ½ tsp ground nutmeg
  • ½ cup chopped walnuts or pecans (optional)
  • ½ cup shredded coconut (optional for extra tropical flair)

Instructions

Step 1: Prep Your Oven and Pan

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.

Step 2: Mix the Wet Ingredients

  1. In a large mixing bowl, mash the ripe bananas until smooth. Add the melted butterbrown sugareggsvanilla extract, and dark rum. Stir until well combined.

Step 3: Combine the Dry Ingredients

  1. In a separate bowl, whisk together the flourbaking sodasaltallspice, and nutmeg.

Step 4: Bring It All Together

  1. Gradually add the dry ingredients to the banana mixture, stirring just until combined. Don’t overmix!
  2. Fold in the nuts and coconut, if using.

Step 5: Bake to Perfection

  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  3. Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Step 6: Slice & Serve

  1. Slice and enjoy warm with a pat of butter, or let it cool for a firmer texture. It’s delicious any way you serve it!
