Let me tell you — there’s something about a perfectly flaky salmon fillet drenched in lemon garlic butter sauce that feels like a little luxury… even if you’re just making dinner on a Tuesday night. 


Ingredients

For the Salmon & Sauce:

  • 4 salmon fillets (about 6 oz each)
  • 2 tbsp olive oil
  • 2 tbsp melted butter
  • 3 garlic cloves (minced)
  • Juice of 1 lemon
  • 1 tsp lemon zest
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • Fresh parsley (for garnish)

For the Roasted Potatoes & Broccoli:

  • 1 lb baby potatoes (halved)
  • 2 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt & pepper to taste
  • 2 cups broccoli florets
  • 1 tbsp olive oil
  • ½ tsp garlic powder

Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.

Step 2: Toss the halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper. Spread them on one side of the baking sheet. Roast for 15 minutes.

Step 3: While the potatoes roast, make the lemon butter sauce by whisking together melted butter, olive oil, garlic, lemon juice, lemon zest, paprika, salt, and pepper.

Step 4: Remove the potatoes from the oven, push them to one side, and add the salmon fillets to the center of the baking sheet. Pour the lemon butter sauce over the salmon.

Step 5: Toss the broccoli florets with olive oil, garlic powder, salt, and pepper — then add them to the other side of the baking sheet.

Step 6: Bake everything together for 12-15 minutes or until the salmon is flaky and the potatoes are crispy.

Step 7: Garnish with fresh parsley and lemon wedges — then serve immediately!
