You know that feeling when you wake up on a chilly morning, and the smell of something warm and sweet fills the air? That’s exactly what these Maple & Brown Sugar Oatmeal Muffins bring to the table. 


Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 cup milk (or almond milk)
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup dark brown sugar
  • ⅓ cup pure maple syrup
  • ⅓ cup melted butter (or coconut oil)
  • 1 teaspoon vanilla extract
  • 1 large egg

Instructions

Step 1: Soak the Oats

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with liners or lightly grease it.
  2. In a small bowl, combine rolled oats and milk. Let them soak for 10-15 minutes while you prepare the rest of the ingredients.

Step 2: Mix the Dry Ingredients

  1. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and brown sugar.

Step 3: Mix the Wet Ingredients

  1. In another bowl, whisk together the maple syrup, melted butter, vanilla extract, and egg.
  2. Stir in the soaked oats and milk mixture.

Step 4: Combine & Bake

  1. Gently fold the wet ingredients into the dry ingredients, mixing just until combined (don’t overmix!).
  2. Scoop the batter into the muffin tin, filling each cup about ¾ full.
  3. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  4. Let cool for 5 minutes, then transfer to a wire rack to cool completely.
