Ingredients

  • 2 large chicken breasts (or 4 small)
  • Salt and pepper, to taste
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp red pepper flakes (optional)
  • 1 package (9-12 oz) ravioli (cheese or spinach recommended)
  • Fresh basil, chopped, for garnish

Instructions

  • Prepare the Chicken:
    Season chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium heat. Sear the chicken for 4-5 minutes on each side until golden brown. Remove from skillet and set aside.
  • Make the Sauce:
    In the same skillet, sauté garlic until fragrant. Add sun-dried tomatoes and cook for another minute. Pour in chicken broth, scraping the bottom of the skillet to deglaze. Stir in heavy cream, Parmesan cheese, and red pepper flakes if using. Let the sauce simmer gently.
  • Cook the Ravioli:
    While the sauce simmers, cook ravioli according to package instructions. Drain and set aside.
  • Combine Everything:
    Return the chicken to the skillet, spooning sauce over the top. Simmer for 5-7 minutes until the chicken is fully cooked. Add the cooked ravioli to the skillet, gently tossing to coat in the sauce.
  • Serve and Garnish:
    Plate the chicken and ravioli, garnish with fresh basil, and serve hot.
