Wet Ingredients:

  • ½ cup melted butter (or coconut oil)
  • ¾ cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg

Extras for Ultimate Chocolate Goodness:

  • 1 ½ cups grated zucchini (about 1 medium zucchini)
  • ¾ cup semi-sweet chocolate chips (plus extra for topping)


Instructions

Step 1: Preheat & Prep

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.

Step 2: Mix the Batter

  1. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  2. In a separate large bowl, whisk melted butter, brown sugar, vanilla, and egg until smooth.
  3. Stir the grated zucchini into the wet ingredients. (No need to squeeze out the moisture—it’s what makes the bars soft!)
  4. Gradually add the dry ingredients into the wet mixture, stirring until just combined.
  5. Fold in chocolate chips.

Step 3: Bake to Perfection

  1. Pour the batter into the prepared pan and spread evenly.
  2. Sprinkle extra chocolate chips on top for that irresistible melty finish.
  3. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

Step 4: Cool & Slice

  1. Let the bars cool in the pan for 15 minutes, then transfer them to a wire rack to cool completely.
