Ingredients
Scale
Dry Ingredients:
- 1 cup all-purpose flour (or whole wheat for a healthier option)
- ½ cup unsweetened cocoa powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
Wet Ingredients:
- ½ cup melted butter (or coconut oil)
- ¾ cup brown sugar
- 1 teaspoon vanilla extract
- 1 large egg
Extras for Ultimate Chocolate Goodness:
- 1 ½ cups grated zucchini (about 1 medium zucchini)
- ¾ cup semi-sweet chocolate chips (plus extra for topping)
Instructions
Step 1: Preheat & Prep
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
Step 2: Mix the Batter
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In a separate large bowl, whisk melted butter, brown sugar, vanilla, and egg until smooth.
- Stir the grated zucchini into the wet ingredients. (No need to squeeze out the moisture—it’s what makes the bars soft!)
- Gradually add the dry ingredients into the wet mixture, stirring until just combined.
- Fold in chocolate chips.
Step 3: Bake to Perfection
- Pour the batter into the prepared pan and spread evenly.
- Sprinkle extra chocolate chips on top for that irresistible melty finish.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
Step 4: Cool & Slice
- Let the bars cool in the pan for 15 minutes, then transfer them to a wire rack to cool completely.
- Slice into squares and enjoy!
