For the Filling:
- 1 pound ground beef (or turkey for a leaner option)
- 4 slices bacon, cooked and crumbled
- 1 cup mushrooms, finely diced
- ½ small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Worcestershire sauce
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 cup shredded cheddar cheese
- ½ cup BBQ sauce
For the Peppers:
- 4 large bell peppers (red, yellow, or green)
- 1 tablespoon olive oil
- ½ cup shredded mozzarella or extra cheddar for topping
Instructions
Step 1: Prep the Peppers
- Preheat your oven to 375°F (190°C).
- Slice the bell peppers in half lengthwise, removing the seeds and membranes.
- Brush the insides lightly with olive oil and place them in a baking dish.
Step 2: Make the Filling
- In a skillet over medium heat, cook the bacon until crispy. Remove, crumble, and set aside.
- In the same skillet, cook the ground beef until browned. Drain excess grease.
- Add the mushrooms, onion, and garlic, cooking for another 3-4 minutes until softened.
- Stir in the Worcestershire sauce, smoked paprika, salt, and pepper, mixing well.
- Remove from heat and stir in BBQ sauce, crispy bacon, and shredded cheddar cheese.
Step 3: Stuff & Bake
- Spoon the beef mixture into the prepared bell pepper halves.
- Top each stuffed pepper with extra shredded cheese.
- Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes until the cheese is bubbly.
