Let’s talk about stuffed peppers—but not just any stuffed peppers. These Mushroom BBQ Bacon Cheeseburger Stuffed Peppers are what happens when a juicy, smoky bacon cheeseburger meets a crisp, sweet bell pepper, and let me tell you—it’s a match made in flavor heaven.

For the Filling:

  • 1 pound ground beef (or turkey for a leaner option)
  • 4 slices bacon, cooked and crumbled
  • 1 cup mushrooms, finely diced
  • ½ small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • ½ cup BBQ sauce

For the Peppers:

  • 4 large bell peppers (red, yellow, or green)
  • 1 tablespoon olive oil
  • ½ cup shredded mozzarella or extra cheddar for topping

Instructions

Step 1: Prep the Peppers

  1. Preheat your oven to 375°F (190°C).
  2. Slice the bell peppers in half lengthwise, removing the seeds and membranes.
  3. Brush the insides lightly with olive oil and place them in a baking dish.

Step 2: Make the Filling

  1. In a skillet over medium heat, cook the bacon until crispy. Remove, crumble, and set aside.
  2. In the same skillet, cook the ground beef until browned. Drain excess grease.
  3. Add the mushrooms, onion, and garlic, cooking for another 3-4 minutes until softened.
  4. Stir in the Worcestershire sauce, smoked paprika, salt, and pepper, mixing well.
  5. Remove from heat and stir in BBQ sauce, crispy bacon, and shredded cheddar cheese.

Step 3: Stuff & Bake

  1. Spoon the beef mixture into the prepared bell pepper halves.
  2. Top each stuffed pepper with extra shredded cheese.
  3. Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes until the cheese is bubbly.
  4. Serve hot with extra BBQ sauce and a sprinkle of fresh parsley.
