If you’re anything like me, sometimes the best desserts are the ones that don’t even require turning on the oven — especially when you’re craving something light, fruity, and a little bit nostalgic. This No Bake Pineapple Pie is exactly that.


Ingredients

For the Crust

  • 2 cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted

For the Filling

  • 1 (8 oz) package cream cheese, softened
  • 1 (14 oz) can sweetened condensed milk
  • 1 (20 oz) can crushed pineapple, drained very well
  • 2 tbsp lime juice (for that little tart kick!)
  • ½ cup shredded coconut (optional, but so delicious)
  • Whipped topping or whipped cream for garnish

Instructions

Step 1: Make the Crust

In a bowl, mix the graham cracker crumbs, sugar, and melted butter until it looks like wet sand.

Press the mixture into a 9-inch pie dish and chill in the fridge while you make the filling.


Step 2: Whip the Filling

In a large bowl, beat the cream cheese until light and fluffy. Add the sweetened condensed milk, lime juice, and drained pineapple. Fold in the shredded coconut if you’re using it.


Step 3: Assemble + Chill

Pour the filling into the chilled crust, smoothing out the top. Cover and refrigerate for at least 4 hours (or overnight) until set.


Step 4: Serve + Enjoy

Top with whipped cream and a sprinkle of toasted coconut or lime zest for that little extra something.
