Let’s talk about nostalgia in dessert form. If you grew up sneaking Little Debbie’s Oatmeal Cream Pies from the pantry, then these Oatmeal Cream Pie Ice Cream Bars are about to become your new obsession. 


Ingredients

  • 10 Oatmeal Cream Pies (store-bought or homemade)
  • 1 pint vanilla ice cream, softened
  • ½ cup whipped topping (Cool Whip or homemade whipped cream)
  • ½ teaspoon vanilla extract
  • ½ teaspoon cinnamon (optional, for extra warmth)

Instructions

Step 1: Prepare the Pan

  1. Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.

Step 2: Make the Oatmeal Cream Pie Crust

  1. In a food processor, pulse 6 oatmeal cream pies until they form a sticky dough-like mixture.
  2. Press the mixture firmly into the bottom of the lined pan to form a crust.

Step 3: Make the Ice Cream Layer

  1. In a bowl, mix the softened vanilla ice cream with the whipped topping, vanilla extract, and cinnamon until smooth and creamy.
  2. Spread the ice cream mixture evenly over the crust.

Step 4: Add the Topping

  1. Crumble the remaining 4 oatmeal cream pies and sprinkle them over the ice cream layer.
  2. Gently press the crumbles so they stick to the ice cream.

Step 5: Freeze and Serve

  1. Cover the dish with plastic wrap and freeze for at least 4 hours, or until firm.
  2. Lift out the frozen bars using the parchment paper, then slice into squares.
  3. Serve immediately and enjoy!
