- 10 Oatmeal Cream Pies (store-bought or homemade)
- 1 pint vanilla ice cream, softened
- ½ cup whipped topping (Cool Whip or homemade whipped cream)
- ½ teaspoon vanilla extract
- ½ teaspoon cinnamon (optional, for extra warmth)
Instructions
Step 1: Prepare the Pan
- Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
Step 2: Make the Oatmeal Cream Pie Crust
- In a food processor, pulse 6 oatmeal cream pies until they form a sticky dough-like mixture.
- Press the mixture firmly into the bottom of the lined pan to form a crust.
Step 3: Make the Ice Cream Layer
- In a bowl, mix the softened vanilla ice cream with the whipped topping, vanilla extract, and cinnamon until smooth and creamy.
- Spread the ice cream mixture evenly over the crust.
Step 4: Add the Topping
- Crumble the remaining 4 oatmeal cream pies and sprinkle them over the ice cream layer.
- Gently press the crumbles so they stick to the ice cream.
Step 5: Freeze and Serve
- Cover the dish with plastic wrap and freeze for at least 4 hours, or until firm.
- Lift out the frozen bars using the parchment paper, then slice into squares.
