  • 68 fresh peaches, peeled and sliced (about 5 cups)
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tbsp lemon juice
  • 2 tbsp cornstarch

For the Crust:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup milk
  • 1 tsp vanilla extract

Optional: Vanilla ice cream or whipped cream for serving


Instructions

  • Prepare the Filling:
    • Preheat your oven to 375°F (190°C).
    • In a large bowl, combine sliced peaches, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat the peaches evenly.
  • Bake the Filling:
    • Pour the peach mixture into a 9×13-inch baking dish. Spread it out evenly and bake for 10 minutes to let the peaches soften and release their juices.
  • Prepare the Crust:
    • In another bowl, whisk together the flour, granulated sugar, baking powder, and salt.
    • Stir in the melted butter, milk, and vanilla extract until a smooth batter forms.
  • Assemble the Cobbler:
    • Remove the baking dish with peaches from the oven. Pour the batter evenly over the peach mixture, covering most of the peaches (it’s okay if some peek through).
  • Bake to Perfection:
    • Return the dish to the oven and bake for 35–40 minutes, or until the crust is golden brown and the filling is bubbling.
  • Serve and Enjoy:
    • Let the cobbler cool slightly before serving. Scoop into bowls and top with vanilla ice cream or whipped cream for the ultimate indulgence.
