- 6–8 fresh peaches, peeled and sliced (about 5 cups)
- 1 cup granulated sugar
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1 tbsp lemon juice
- 2 tbsp cornstarch
For the Crust:
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 3/4 cup milk
- 1 tsp vanilla extract
Optional: Vanilla ice cream or whipped cream for serving
Instructions
- Prepare the Filling:
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine sliced peaches, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat the peaches evenly.
- Bake the Filling:
- Pour the peach mixture into a 9×13-inch baking dish. Spread it out evenly and bake for 10 minutes to let the peaches soften and release their juices.
- Prepare the Crust:
- In another bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- Stir in the melted butter, milk, and vanilla extract until a smooth batter forms.
- Assemble the Cobbler:
- Remove the baking dish with peaches from the oven. Pour the batter evenly over the peach mixture, covering most of the peaches (it’s okay if some peek through).
- Bake to Perfection:
- Return the dish to the oven and bake for 35–40 minutes, or until the crust is golden brown and the filling is bubbling.
