For the Crust:
- 24 Oreo cookies, finely crushed
- 5 tbsp unsalted butter, melted
For the Cheesecake Filling:
- 3 (8 oz) blocks cream cheese, softened
- ¾ cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- ½ cup sour cream
- ½ cup heavy cream
- 12 Oreos, crushed into chunks
For the Topping (Optional, But Highly Recommended!):
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 6 Oreos, crushed
- Chocolate ganache drizzle (melted chocolate + heavy cream)
Instructions
Step 1: Make the Oreo Crust
- Preheat oven to 325°F (163°C).
- In a bowl, mix crushed Oreos and melted butter until combined.
- Press the mixture into a 9-inch springform pan, creating an even crust.
- Bake for 10 minutes, then let it cool while you make the filling.
Step 2: Prepare the Cheesecake Batter
- In a large bowl, beat the cream cheese and sugar until smooth.
- Add vanilla extract, then mix in the eggs one at a time, beating after each.
- Gently fold in the sour cream, heavy cream, and crushed Oreos.
Step 3: Bake the Cheesecake
- Pour the batter over the cooled crust.
- Wrap the pan in foil and place it in a water bath (a large roasting pan filled with hot water).
- Bake for 50-60 minutes, or until the center is slightly jiggly but set.
- Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour.
Step 4: Chill & Decorate
- Refrigerate for at least 4 hours (preferably overnight) for the best texture.
- Top with whipped cream, more crushed Oreos, and a drizzle of chocolate ganache.
