For the Golden Oreo Crust:

  • 24 Golden Oreo cookies (finely crushed)
  • 5 tablespoons unsalted butter, melted

For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • ½ cup sour cream

For the Strawberry Swirl:

  • 1 cup fresh strawberries, chopped
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice

Instructions

Step 1: Make the Crust

  1. Preheat your oven to 325°F (163°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang for easy removal.
  2. In a food processor, pulse Golden Oreos until finely crushed. Stir in melted butter until the mixture resembles wet sand.
  3. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes, then let cool while you prepare the filling.

Step 2: Prepare the Strawberry Swirl

  1. In a small saucepan over medium heat, combine strawberries, sugar, and lemon juice.
  2. Cook for about 5 minutes, stirring occasionally, until the strawberries break down and release their juices.
  3. Blend or mash the mixture until smooth, then strain out the seeds for a silky swirl. Let it cool slightly.

Step 3: Make the Cheesecake Filling

  1. In a large bowl, beat cream cheese and sugar until smooth and creamy.
  2. Add vanilla extract, then mix in the eggs one at a time until fully incorporated.
  3. Stir in sour cream and mix until smooth.

Step 4: Assemble & Swirl

  1. Pour the cheesecake filling over the cooled crust and smooth it out.
  2. Drizzle the strawberry puree over the cheesecake and use a knife or toothpick to swirl it into the batter.

Step 5: Bake & Chill

  1. Bake for 35-40 minutes, or until the center is just set (a slight jiggle is okay).
  2. Turn off the oven, crack the door slightly, and let the bars cool inside for 15 minutes. Then transfer to the fridge for at least 4 hours (or overnight for best results).

Step 6: Slice & Serve

  1. Lift the cheesecake bars out of the pan using the parchment paper.
  2. Slice into squares and enjoy!
