For the Brownies:

  • 1 box fudge brownie mix (plus ingredients listed on the box) or homemade brownies
  • 1 teaspoon vanilla extract

For the Pecan Pie Filling:

  • ¾ cup chopped pecans
  • ½ cup light corn syrup
  • ¼ cup brown sugar
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 pinch salt

For the Coating:

  • 12 oz semi-sweet or dark chocolate, melted
  • ½ cup chopped pecans (for garnish)
  • 1 teaspoon flaky sea salt (optional, but recommended)

Instructions

1. Bake the Brownies & Let Them Cool

Prepare your favorite brownies (box mix or homemade) according to the package instructions. Let them cool completely. Once cooled, crumble them into a large bowl and mix in 1 teaspoon of vanilla extract. This makes the brownies extra flavorful and pliable for rolling!

2. Make the Pecan Pie Filling

In a saucepan over medium heat, combine the chopped pecans, corn syrup, brown sugar, butter, vanilla, and salt. Cook, stirring, for about 5 minutes, until thickened and gooey. Let the mixture cool slightly—it should be sticky but scoopable.

3. Assemble the Brownie Bombs

Scoop about 2 tablespoons of brownie crumbs and flatten it in your palm. Place a small spoonful of pecan pie filling in the center and carefully wrap the brownie around it, rolling it into a ball. Repeat with the remaining brownie and pecan filling.

4. Coat in Chocolate

Melt the semi-sweet or dark chocolate in the microwave or over a double boiler. Using a fork or toothpick, dip each brownie bomb into the melted chocolate, coating it completely. Let any excess chocolate drip off.

5. Garnish & Set

Place the chocolate-covered brownie bombs on parchment paper, then sprinkle with chopped pecans and a pinch of flaky sea salt for that perfect sweet-salty finish. Let them set at room temperature or in the fridge until firm.
