For the Chicken:
- 2 tablespoons oil (sesame or vegetable)
- 1 ½ lbs chicken breast or thighs, cut into bite-sized pieces
- Salt & black pepper, to taste
For the Pineapple Teriyaki Sauce:
- ½ cup soy sauce (low-sodium preferred)
- ¼ cup pineapple juice (from canned pineapple or fresh)
- ¼ cup brown sugar
- 2 tablespoons honey
- 2 teaspoons rice vinegar
- 1 teaspoon fresh ginger, grated
- 2 cloves garlic, minced
- 1 tablespoon cornstarch + 2 tablespoons water (slurry for thickening)
Add-Ins:
- 1 cup pineapple chunks (fresh or canned)
- 1 teaspoon sesame seeds (optional, for garnish)
- 2 green onions, sliced (for garnish)
Instructions
Step 1: Sear the Chicken
- Heat oil in a large pan or skillet over medium-high heat.
- Add chicken pieces, season with salt and pepper, and cook until golden brown and cooked through (about 5-6 minutes). Remove and set aside.
Step 2: Make the Teriyaki Sauce
- In the same pan, add soy sauce, pineapple juice, brown sugar, honey, rice vinegar, ginger, and garlic. Stir and bring to a gentle simmer.
- Mix cornstarch and water in a small bowl to make a slurry. Slowly stir it into the sauce and cook for 1-2 minutesuntil thickened.
Step 3: Bring It All Together
- Add the cooked chicken and pineapple chunks back into the pan. Stir well to coat everything in the sticky, glossy sauce.
- Let it simmer for 2 minutes so the flavors meld.
Step 4: Serve & Garnish
- Serve over steamed rice, noodles, or in lettuce cups.
- Garnish with sesame seeds and sliced green onions.
