    • 1 cup unsalted butter, melted
    • 1/2 cup granulated sugar
    • 2 cups all-purpose flour
    • 1/2 tsp salt
  • Pistachio Layer:
    • 2 (3.4 oz) boxes of pistachio instant pudding mix
    • 3 cups cold milk
  • Cream Layer:
    • 8 oz cream cheese, softened
    • 1 cup powdered sugar
    • 1 tsp vanilla extract
    • 1 (8 oz) container whipped topping (like Cool Whip)
  • Topping:
    • 1/2 cup chopped pistachios
    • Optional: White chocolate shavings or a drizzle of melted white chocolate

Instructions

  • Prepare the Cookie Crust:
    Preheat your oven to 350°F (175°C). Combine the melted butter, granulated sugar, flour, and salt in a bowl. Press the mixture into the bottom of a greased 9×13-inch baking dish. Bake for 18–20 minutes, or until lightly golden. Let cool completely.
  • Whip Up the Pistachio Layer:
    In a large bowl, whisk together the pistachio pudding mix and cold milk. Let it sit for 5 minutes to thicken.
  • Mix the Cream Layer:
    Beat the cream cheese, powdered sugar, and vanilla extract together until smooth. Gently fold in the whipped topping until fully combined.
  • Assemble the Layers:
    Spread the cream cheese mixture evenly over the cooled cookie crust. Gently layer the pistachio pudding on top, smoothing it out with a spatula.
  • Add the Final Touches:
    Sprinkle the top with chopped pistachios and, if desired, white chocolate shavings.
  • Chill and Serve:
    Refrigerate the bars for at least 2–3 hours to set. Slice into squares and serve chilled.
