Description

Let’s talk about truffles—those tiny spheres of indulgence that make every occasion feel like a celebration. But today, we’re taking things up a notch with Pistachio Raspberry Truffles.

Ingredients

Scale
  • 1 1/2 cups white chocolate chips
  • 1/4 cup heavy cream
  • 1/2 cup finely ground pistachios (plus extra for coating)
  • 1/4 cup freeze-dried raspberries, crushed into powder
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the Base:
In a microwave-safe bowl, combine the white chocolate chips and heavy cream. Microwave in 20-second intervals, stirring after each, until the mixture is smooth and fully melted.
  2. Mix the Flavors:
Stir in the vanilla extract, salt, ground pistachios, and raspberry powder until fully incorporated. The mixture will thicken as it cools.
  3. Chill the Mixture:
Cover the bowl and refrigerate for 2-3 hours, or until the mixture is firm enough to scoop.
  4. Shape the Truffles:
Using a small cookie scoop or spoon, portion out the mixture and roll it into bite-sized balls.
  5. Coat the Truffles:
Roll each truffle in additional ground pistachios for a crunchy coating. For an extra pop of color, sprinkle a touch of raspberry powder on top.
  6. Chill and Serve:
Refrigerate the truffles for another hour to set. Serve chilled or at room temperature.
