Description

If there’s one dish that brings everyone to the table, it’s this Poppy Seed Chicken Casserole. It’s rich, creamy, and loaded with tender chicken in a velvety sauce, all topped with a buttery, crunchy cracker crust. It’s like a warm hug in a casserole dish!

Ingredients

Scale
  • 3 cups cooked chicken, shredded or diced (rotisserie works great!)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • 1 tablespoon poppy seeds
  • 1 cup shredded cheddar cheese (optional, but delicious!)
  • 1 sleeve Ritz crackers, crushed (about 1 ½ cups)
  • 4 tablespoons butter, melted

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a 9×13-inch baking dish.

Step 2: Make the Creamy Chicken Mixture

  1. In a large bowl, mix together the chicken, cream of chicken soup, sour cream, garlic powder, onion powder, black pepper, poppy seeds, and shredded cheese (if using).
  2. Stir until everything is well combined.

Step 3: Assemble the Casserole

  1. Spread the creamy chicken mixture evenly into the prepared baking dish.
  2. In a separate bowl, mix the crushed Ritz crackers with the melted butter.
  3. Sprinkle the cracker topping evenly over the casserole.

Step 4: Bake to Golden Perfection

  1. Bake uncovered for 25-30 minutes, or until the top is golden brown and the casserole is bubbly.
  2. Let it cool for 5 minutes before serving.

Step 5: Serve & Enjoy!

Scoop out generous portions and serve warm! It pairs beautifully with a side of steamed veggies, a fresh salad, or even fluffy rice.
