Description

These Raspberry Cheesecake Overnight Oats deliver all the flavor of a rich, creamy cheesecake in an easy, no-bake, healthy breakfast. The secret? A blend of tangy Greek yogurt, vanilla, and a touch of cream cheese to create that signature cheesecake taste.

Ingredients

Scale

For the Overnight Oats:

  • ½ cup rolled oats
  • ½ cup milk (dairy or non-dairy)
  • ¼ cup Greek yogurt (or more for extra creaminess)
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon honey or maple syrup
  • ½ teaspoon vanilla extract
  • ½ teaspoon lemon zest (for that cheesecake flavor!)
  • ¼ cup fresh or frozen raspberries (mashed slightly)

For Toppings (Optional but Delicious!):

  • Extra raspberries
  • Crushed graham crackers (for the “cheesecake crust” vibe!)
  • Chopped nuts (almonds or pecans work great!)
  • White chocolate chips or dark chocolate drizzle

Instructions

Step 1: Mix the Base

  1. In a bowl or mason jar, whisk together Greek yogurt, cream cheese, honey, vanilla, and lemon zest until smooth.

Step 2: Combine with Oats & Raspberries

  1. Stir in oats and milk, mixing until combined.
  2. Gently fold in mashed raspberries to distribute flavor.

Step 3: Chill Overnight

  1. Cover and refrigerate for at least 4 hours or overnight.

Step 4: Top & Serve!

  1. In the morning, stir the oats and add toppings like extra raspberries, crushed graham crackers, or a drizzle of honey.
  2. Enjoy straight from the jar or in a bowl!
