This Simple Banana Snack Cake is moist, lightly sweet, and full of rich banana flavor. The secret? Mashed ripe bananas combined with a touch of cinnamon and vanilla for a classic, comforting taste.


Ingredients

  • 2 ripe bananas, mashed (about 1 cup)
  • ½ cup granulated sugar
  • ¼ cup brown sugar (for a hint of caramel flavor!)
  • ½ cup unsalted butter, melted (or vegetable oil)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon (optional, but adds warmth!)
  • ½ cup milk (or buttermilk for extra tenderness!)

Optional Add-Ins (For Extra Flavor!):

  • ½ cup chopped nuts (walnuts or pecans!)
  • ½ cup chocolate chips
  • 1 tablespoon honey (for extra sweetness!)

Instructions

Step 1: Prep & Preheat

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan or line with parchment paper.

Step 2: Mix the Wet Ingredients

  1. In a large bowl, mash bananas until smooth.
  2. Stir in granulated sugar, brown sugar, melted butter, eggs, and vanilla extract until well combined.

Step 3: Add the Dry Ingredients

  1. Sprinkle flour, baking soda, baking powder, salt, and cinnamon over the banana mixture.
  2. Gently fold everything together until just combined. (Don’t overmix—this keeps the cake fluffy!)
  3. Stir in milk to create a smooth batter.

Step 4: Bake to Perfection

  1. Pour the batter into the prepared baking pan.
