These Simple Double Chocolate Cookies are thick, chewy, and packed with rich cocoa flavor. The secret? A combination of cocoa powder for deep chocolate intensity and chocolate chips for extra melty goodness.


Ingredients

  • ½ cup (1 stick) unsalted butter, melted
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup chocolate chips (semi-sweet, dark, or milk!)

Optional Add-Ins for Extra Flavor:

  • ½ teaspoon espresso powder (intensifies the chocolate!)
  • ½ cup chopped nuts (pecans or walnuts!)
  • Flaky sea salt for topping

Instructions

Step 1: Prep & Preheat

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 2: Mix the Wet Ingredients

  1. In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth.
  2. Add egg and vanilla extract, whisking until fully combined.

Step 3: Add the Dry Ingredients

  1. Sift in flour, cocoa powder, baking soda, and salt.
  2. Gently mix until just combined—don’t overmix!
  3. Fold in chocolate chips (and any extra add-ins like nuts).

Step 4: Scoop & Bake

  1. Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them 2 inches apart.
  2. Bake for 9-11 minutes, until the edges are set but the centers look slightly underbaked.

Step 5: Cool & Enjoy!

  1. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
  2. Eat warm for melty chocolate perfection, or let cool for a chewier texture!
