For the Brisket:

  • 34 lbs beef brisket
  • 3 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1/4 cup Worcestershire sauce
  • 2 cups beef broth
  • 1/4 cup balsamic vinegar
  • 1 tbsp Dijon mustard
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and black pepper, to taste

Optional Garnish:

  • Fresh parsley, chopped
  • Crispy fried onions

Instructions

  • Prepare the Brisket: Season the brisket generously with salt, pepper, paprika, and thyme.
  • Sear the Brisket: Heat olive oil in a large skillet over medium-high heat. Sear the brisket on both sides until golden brown, about 4 minutes per side. Transfer to the slow cooker.
  • Caramelize the Onions: In the same skillet, add the onions. Sauté until softened and golden brown, about 10 minutes. Add the garlic and cook for an additional minute.
  • Build the Sauce: Deglaze the skillet with balsamic vinegar, scraping up any browned bits. Stir in Worcestershire sauce, Dijon mustard, and beef broth. Pour the mixture over the brisket in the slow cooker.
  • Cook Low and Slow: Cover and cook on low for 8–10 hours or on high for 5–6 hours, until the brisket is fork-tender.
  • Slice and Serve: Remove the brisket from the slow cooker and let it rest for 10 minutes before slicing. Serve with the onion sauce spooned over the top.
