- 2 lbs beef chuck or stew meat, cut into chunks
- 1/2 cup soy sauce
- 1/4 cup honey
- 1/4 cup brown sugar
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1/4 cup rice vinegar
- 1 tbsp sesame oil
- 1 cup beef broth
- 2 tbsp cornstarch + 2 tbsp water (for thickening)
- 2 green onions, sliced (for garnish)
- Sesame seeds (optional, for garnish)
Instructions
- Prepare the Sauce: In a bowl, whisk together soy sauce, honey, brown sugar, garlic, ginger, rice vinegar, sesame oil, and beef broth.
- Add Ingredients to the Slow Cooker: Place the beef chunks in the slow cooker and pour the sauce over them.
- Cook Low and Slow: Cover and cook on low for 6–8 hours or high for 4–5 hours, until the beef is tender and flavorful.
- Thicken the Sauce: In the last 30 minutes of cooking, mix cornstarch and water in a small bowl to create a slurry. Stir it into the slow cooker to thicken the sauce.
- Serve and Garnish: Serve over rice or noodles, garnished with green onions and sesame seeds.
