Oatmeal Raisin Cookie Bars are here to satisfy that craving for a nostalgic treat with a modern twist. 


Ingredients

  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins

Instructions

  • Prepare the Pan:
    Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper for easy removal.
  • Mix the Wet Ingredients:
    In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth. Add the eggs and vanilla extract, and mix until fully combined.
  • Combine the Dry Ingredients:
    In another bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add this to the wet ingredients, mixing just until combined.
  • Add the Oats and Raisins:
    Stir in the oats and raisins until evenly distributed.
  • Assemble and Bake:
    Press the dough into the prepared baking dish in an even layer. Bake for 20–25 minutes, or until the edges are golden brown and the center is set.
  • Cool and Slice:
    Allow the bars to cool completely in the pan before slicing into squares or rectangles.
