Southwest Pasta Salad with Creamy Chipotle Dressing

Description

For the Pasta Salad:

  • 12 oz pasta (rotini, bowtie, or penne works best!)
  • 1 cup canned black beans, drained & rinsed
  • 1 cup corn (fresh, canned, or frozen)
  • ½ red bell pepper, diced
  • ½ yellow bell pepper, diced
  • ½ red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • ½ cup cilantro, chopped

For the Creamy Chipotle Dressing:

  • ½ cup sour cream (or Greek yogurt for a lighter option!)
  • ¼ cup mayonnaise
  • 1 chipotle pepper in adobo sauce, minced
  • 1 tablespoon adobo sauce (from the can of chipotle peppers)
  • 1 tablespoon lime juice
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt

Instructions

Step 1: Cook the Pasta

  1. Cook pasta according to package instructions until al dente.
  2. Drain and rinse under cold water to stop cooking. Set aside.

Step 2: Prep the Salad Ingredients

  1. In a large bowl, combine black beans, corn, bell peppers, red onion, cherry tomatoes, avocado, and cilantro.

Step 3: Make the Chipotle Dressing

  1. In a small bowl, whisk together sour cream, mayo, chipotle pepper, adobo sauce, lime juice, garlic powder, cumin, smoked paprika, and salt.

Step 4: Assemble & Toss

  1. Add the cooked pasta to the bowl with the veggies.
  2. Pour the creamy chipotle dressing over the salad and toss until everything is coated.

Step 5: Chill & Serve!

  1. Cover and refrigerate for at least 30 minutes (for best flavor!).
  2. Serve chilled, garnished with extra cilantro & a squeeze of lime!
