If you love strawberry shortcake ice cream bars, creamy cheesecake, and bite-sized desserts, then these Strawberry Crunch Cheesecake Bites are about to become your new obsession!


Ingredients

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • ¼ cup powdered sugar
  • ½ tsp vanilla extract
  • ¼ cup heavy cream

For the Strawberry Crunch Coating:

  • 12 Golden Oreos, crushed
  • ½ cup freeze-dried strawberries, crushed
  • 2 tbsp unsalted butter, melted

For Dipping (Optional but SO good!):

  • 8 oz white chocolate, melted
  • Extra strawberry crumbs for topping

Instructions

Step 1: Make the Cheesecake Filling

  • In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  • Add heavy cream and whip until light and fluffy.
  • Scoop into small 1-inch balls and place them on a lined baking sheet.
  • Freeze for 30-45 minutes until firm.

Step 2: Make the Crunch Coating

  • In a food processor, blend Golden Oreos and freeze-dried strawberries until crumbly.
  • Stir in melted butter until it forms a crunchy topping.

Step 3: Coat the Cheesecake Bites

  • Roll each frozen cheesecake ball in the strawberry crunch mixture until fully coated.
  • Place them back on the baking sheet and freeze for another 15 minutes.

Step 4 (Optional): Dip in White Chocolate!

  • Melt white chocolate in 30-second intervals in the microwave.
  • Dip each cheesecake bite halfway into the chocolate and sprinkle with extra crunch topping.
  • Let the chocolate set before serving.

Step 5: Chill & Enjoy!

  • Keep in the fridge until ready to eat or store in the freezer for a firmer bite!
