For the Cheesecake Filling:
- 8 oz cream cheese, softened
- ¼ cup powdered sugar
- ½ tsp vanilla extract
- ¼ cup heavy cream
For the Strawberry Crunch Coating:
- 12 Golden Oreos, crushed
- ½ cup freeze-dried strawberries, crushed
- 2 tbsp unsalted butter, melted
For Dipping (Optional but SO good!):
- 8 oz white chocolate, melted
- Extra strawberry crumbs for topping
Instructions
Step 1: Make the Cheesecake Filling
- In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
- Add heavy cream and whip until light and fluffy.
- Scoop into small 1-inch balls and place them on a lined baking sheet.
- Freeze for 30-45 minutes until firm.
Step 2: Make the Crunch Coating
- In a food processor, blend Golden Oreos and freeze-dried strawberries until crumbly.
- Stir in melted butter until it forms a crunchy topping.
Step 3: Coat the Cheesecake Bites
- Roll each frozen cheesecake ball in the strawberry crunch mixture until fully coated.
- Place them back on the baking sheet and freeze for another 15 minutes.
Step 4 (Optional): Dip in White Chocolate!
- Melt white chocolate in 30-second intervals in the microwave.
- Dip each cheesecake bite halfway into the chocolate and sprinkle with extra crunch topping.
- Let the chocolate set before serving.
