Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar

Cheesecake Filling:

  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups heavy whipping cream, cold

Strawberry Topping:

  • 2 cups fresh strawberries, sliced
  • 1/4 cup strawberry jam
  • 1 tbsp water

 


Instructions

1. Prepare the Crust

  • Mix graham cracker crumbs, melted butter, and sugar in a bowl until combined. Press the mixture into the bottom of a 9-inch springform pan. Chill in the fridge for at least 15 minutes.

2. Make the Cheesecake Filling

  • In a large bowl, beat softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  • In a separate bowl, whip heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

3. Assemble the Cheesecake

  • Spread the cheesecake filling evenly over the chilled crust. Smooth the top with a spatula. Cover and refrigerate for at least 4 hours or overnight for best results.

4. Prepare the Strawberry Topping

  • In a small saucepan, heat the strawberry jam and water over low heat until smooth. Let it cool slightly.
  • Arrange sliced strawberries on top of the cheesecake, then drizzle with the jam glaze.

5. Serve and Enjoy

  • Carefully remove the cheesecake from the springform pan. Slice and serve chilled.
