For the Donuts:
- 2 1/4 tsp active dry yeast
- 1/4 cup warm water (110°F)
- 3/4 cup warm milk (110°F)
- 1/4 cup granulated sugar
- 1/4 tsp salt
- 1 large egg
- 1/4 cup unsalted butter, melted
- 3 1/2 cups all-purpose flour
- Oil for frying
For the Strawberry Filling:
- 1 1/2 cups fresh strawberries, diced
- 1/4 cup granulated sugar
- 1 tbsp cornstarch
- 1 tbsp lemon juice
For the Glaze:
- 1 1/2 cups powdered sugar
- 2–3 tbsp milk
- 1/2 tsp vanilla extract
Instructions
- Prepare the Dough:
- In a small bowl, dissolve the yeast in warm water and let it sit for 5 minutes until foamy.
- In a large mixing bowl, combine the warm milk, sugar, salt, egg, melted butter, and yeast mixture. Gradually add the flour, mixing until a soft dough forms.
- Knead the dough on a floured surface for about 8–10 minutes until smooth and elastic. Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour, or until doubled in size.
- Make the Strawberry Filling:
- In a small saucepan, combine the strawberries, sugar, cornstarch, and lemon juice. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and let it cool completely.
- Shape and Fry the Donuts:
- Punch down the risen dough and roll it out to about 1/2-inch thickness. Use a round cutter to cut out donut shapes.
- Heat oil in a deep fryer or large pot to 350°F. Fry the donuts in batches, about 1–2 minutes per side, until golden brown. Drain on paper towels and let them cool slightly.
- Fill and Glaze the Donuts:
- Using a piping bag with a narrow tip, inject the cooled strawberry filling into each donut. Be generous for that perfect burst of flavor.
- In a bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Dip each donut into the glaze, letting the excess drip off.
- Serve and Enjoy:
- Allow the glaze to set for a few minutes before serving. Watch everyone’s faces light up with the first bite!
