There’s something so magical about biting into a freshly made donut — that perfect mix of fluffy dough, sweet glaze, and a hidden surprise inside.

For the Donuts:

  • 2 1/4 tsp active dry yeast
  • 1/4 cup warm water (110°F)
  • 3/4 cup warm milk (110°F)
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 1 large egg
  • 1/4 cup unsalted butter, melted
  • 3 1/2 cups all-purpose flour
  • Oil for frying

For the Strawberry Filling:

  • 1 1/2 cups fresh strawberries, diced
  • 1/4 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice

For the Glaze:

  • 1 1/2 cups powdered sugar
  • 23 tbsp milk
  • 1/2 tsp vanilla extract


Instructions

  1. Prepare the Dough:
    • In a small bowl, dissolve the yeast in warm water and let it sit for 5 minutes until foamy.
    • In a large mixing bowl, combine the warm milk, sugar, salt, egg, melted butter, and yeast mixture. Gradually add the flour, mixing until a soft dough forms.
    • Knead the dough on a floured surface for about 8–10 minutes until smooth and elastic. Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour, or until doubled in size.
  2. Make the Strawberry Filling:
    • In a small saucepan, combine the strawberries, sugar, cornstarch, and lemon juice. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and let it cool completely.
  3. Shape and Fry the Donuts:
    • Punch down the risen dough and roll it out to about 1/2-inch thickness. Use a round cutter to cut out donut shapes.
    • Heat oil in a deep fryer or large pot to 350°F. Fry the donuts in batches, about 1–2 minutes per side, until golden brown. Drain on paper towels and let them cool slightly.
  4. Fill and Glaze the Donuts:
    • Using a piping bag with a narrow tip, inject the cooled strawberry filling into each donut. Be generous for that perfect burst of flavor.
    • In a bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Dip each donut into the glaze, letting the excess drip off.
  5. Serve and Enjoy:
    • Allow the glaze to set for a few minutes before serving. Watch everyone’s faces light up with the first bite!
