- 1 cup cornmeal

- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 cup buttermilk
- 2 large eggs
- 4 tbsp unsalted butter, melted
- ½ cup corn kernels (optional, for extra texture)
For the Honey Butter:
- ½ cup unsalted butter, softened
- 3 tbsp honey
- 1 tsp vanilla extract (optional)
- Pinch of salt

- Preheat & Prep:
Preheat your oven to 375°F (190°C). Grease a mini muffin tin or line it with paper liners. - Mix the Cornbread Batter:
In a large bowl, whisk together the cornmeal, flour, sugar (if using), baking powder, baking soda, and salt. In another bowl, mix the buttermilk, eggs, and melted butter. Gradually combine the wet ingredients with the dry ingredients until just mixed. Fold in the corn kernels if using. - Bake the Cornbread Bites:
