- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade blend)
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (10 oz) can diced tomatoes with green chilies (Rotel)
- 1 (15 oz) can tomato sauce
- 2 cups beef broth
- 1 teaspoon cumin
- ½ teaspoon smoked paprika
- ½ teaspoon black pepper
- ½ teaspoon salt (adjust to taste)
For Toppings (Optional but Recommended!):
- Shredded cheddar cheese
- Sour cream or Greek yogurt
- Chopped cilantro
- Tortilla chips or strips
- Sliced jalapeños
- Avocado or guacamole
Instructions
Step 1: Brown the Beef
- Heat a large Dutch oven or soup pot over medium-high heat.
- Add the ground beef and diced onion, cooking until browned and cooked through (about 5 minutes).
- Stir in the garlic and cook for another 30 seconds, until fragrant.
- Drain excess grease, if needed.
Step 2: Add the Good Stuff
- Sprinkle in the taco seasoning, cumin, smoked paprika, salt, and black pepper. Stir well.
- Pour in the black beans, kidney beans, corn, diced tomatoes with chilies, tomato sauce, and beef broth.
- Stir everything together and bring to a gentle simmer.
