For the Soup:

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade blend)
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (10 oz) can diced tomatoes with green chilies (Rotel)
  • 1 (15 oz) can tomato sauce
  • 2 cups beef broth
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt (adjust to taste)

For Toppings (Optional but Recommended!):

  • Shredded cheddar cheese
  • Sour cream or Greek yogurt
  • Chopped cilantro
  • Tortilla chips or strips
  • Sliced jalapeños
  • Avocado or guacamole

Instructions

Step 1: Brown the Beef

  1. Heat a large Dutch oven or soup pot over medium-high heat.
  2. Add the ground beef and diced onion, cooking until browned and cooked through (about 5 minutes).
  3. Stir in the garlic and cook for another 30 seconds, until fragrant.
  4. Drain excess grease, if needed.

Step 2: Add the Good Stuff

  1. Sprinkle in the taco seasoning, cumin, smoked paprika, salt, and black pepper. Stir well.
  2. Pour in the black beans, kidney beans, corn, diced tomatoes with chilies, tomato sauce, and beef broth.
  3. Stir everything together and bring to a gentle simmer.

Step 3: Let It Simmer

  1. Reduce heat to low and let the soup simmer for 20 minutes, stirring occasionally.
  2. Taste and adjust seasoning if needed.

Step 4: Serve with Toppings!

  1. Ladle soup into bowls.
  2. Top with cheese, sour cream, tortilla chips, and anything else you love.
