Ingredients

  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 tablespoons granulated sugar
  • 1 ¼ cups buttermilk (or milk + 1 tbsp vinegar)
  • 1 egg
  • 3 tablespoons melted butter (plus extra for greasing)
  • 1 teaspoon vanilla extract

Instructions

Step 1: Mix the Dry Ingredients

  1. In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, and sugar.

Step 2: Combine the Wet Ingredients

  1. In another bowl, whisk together buttermilk, egg, melted butter, and vanilla extract.

Step 3: Make the Batter

  1. Pour the wet ingredients into the dry ingredients. Gently stir until just combined—don’t overmix! (A few lumps are okay.)

Step 4: Cook the Pancakes

  1. Heat a non-stick skillet or griddle over medium-low heat. Lightly grease with butter.
