If there’s one dessert that brings out my inner cookie monster — it’s these Thick & Chewy Monster Cookie Bars.

Creamy Peanut Butter | ¾ cup |
Brown Sugar | ¾ cup (packed) |
Granulated Sugar | ½ cup |
Eggs | 2 large |
Vanilla Extract | 1 tsp |
Quick Oats | 2 cups |
Baking Soda | 1 tsp |
Mini Chocolate Chips | ½ cup |
M&Ms | ¾ cup (plus extra for topping) |
Instructions
Preheat your oven to 350°F (180°C).
In a large bowl, whisk together melted butter, peanut butter, brown sugar, and granulated sugar until smooth.
Stir in eggs and vanilla extract until creamy.
Mix in oats, baking soda, chocolate chips, and M&Ms until everything is combined.
Line a 9×13-inch pan with parchment paper and press the dough evenly into the pan. Sprinkle extra M&Ms on top (because more is always better, right?).
Bake for 18-22 minutes until the edges are golden but the center is still soft.
Let cool completely before slicing into bars (if you can wait that long!).
