For the Crust:
- 2 cups chocolate cookie crumbs (like Oreos)
- 1/4 cup unsalted butter, melted

- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup semi-sweet chocolate chips, melted
For the Ganache Topping:
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
Instructions
- Prepare the Crust:
- Preheat your oven to 325°F (160°C).
- Combine the chocolate cookie crumbs and melted butter in a bowl. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes and let it cool.
- Make the Cheesecake Filling:
- In a large bowl, beat the cream cheese and sugar until smooth and creamy. Add the cocoa powder and mix well.
- Add the eggs, one at a time, mixing on low speed until just combined. Stir in the vanilla and melted chocolate.
- Pour the filling over the crust and smooth the top with a spatula. Bake for 50-55 minutes, or until the center is set but still slightly jiggly.
- Cool and Chill:
- Let the cheesecake cool in the pan for 1 hour. Refrigerate for at least 4 hours or overnight for best results.
- Prepare the Ganache Topping:
- Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer. Remove from heat and pour over the chocolate chips in a bowl. Let it sit for 2 minutes, then whisk until smooth.
- Spread the ganache over the chilled cheesecake, letting it drip slightly over the edges.
- Decorate and Serve:
- Add chocolate curls, shavings, or a dusting of cocoa powder for garnish. Slice and enjoy!
