For the Crust:

  • 2 cups chocolate cookie crumbs (like Oreos)
  • 1/4 cup unsalted butter, melted

For the Cheesecake Filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup semi-sweet chocolate chips, melted

For the Ganache Topping:

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Instructions

  • Prepare the Crust:
    • Preheat your oven to 325°F (160°C).
    • Combine the chocolate cookie crumbs and melted butter in a bowl. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes and let it cool.
  • Make the Cheesecake Filling:
    • In a large bowl, beat the cream cheese and sugar until smooth and creamy. Add the cocoa powder and mix well.
    • Add the eggs, one at a time, mixing on low speed until just combined. Stir in the vanilla and melted chocolate.
    • Pour the filling over the crust and smooth the top with a spatula. Bake for 50-55 minutes, or until the center is set but still slightly jiggly.
  • Cool and Chill:
    • Let the cheesecake cool in the pan for 1 hour. Refrigerate for at least 4 hours or overnight for best results.
  • Prepare the Ganache Topping:
    • Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer. Remove from heat and pour over the chocolate chips in a bowl. Let it sit for 2 minutes, then whisk until smooth.
    • Spread the ganache over the chilled cheesecake, letting it drip slightly over the edges.
  • Decorate and Serve:
    • Add chocolate curls, shavings, or a dusting of cocoa powder for garnish. Slice and enjoy!
