Ingredients

- 1/3 cup granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ cup unsalted butter, cold and cubed
- ½ cup heavy cream (plus extra for brushing)
- 1 large egg
- 1 teaspoon vanilla extract
- ½ cup dried cranberries (or fresh cranberries, chopped)
- ½ cup white chocolate chips
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your hands to mix until the butter resembles coarse crumbs.
In a separate bowl, whisk together the heavy cream, egg, and vanilla extract. Pour into the dry ingredients and stir until just combined.
Gently fold in the cranberries and white chocolate chips, being careful not to overmix.
Turn the dough onto a floured surface and shape it into a 1-inch thick circle. Cut into 8 triangles (or use a round cutter for classic scones).
Place the scones on the prepared baking sheet. Brush the tops with a little extra heavy cream for a golden finish. Bake for 16-18 minutes, or until golden brown.
