Ingredients

  • For the Salad:
    • 6 cups romaine lettuce, chopped
    • 1 cup cherry tomatoes, halved
    • ½ cup red onion, thinly sliced
    • ½ cup banana peppers or pepperoncini, sliced
    • 1 cup cubed mozzarella or provolone cheese
    • ½ cup black or Kalamata olives, sliced
    • 4 oz salami, sliced into strips
    • 4 oz pepperoni, sliced into strips
    • Optional: 1 cup cooked pasta (for a heartier salad)
  • For the Dressing:
    • ¼ cup olive oil
    • 2 tbsp red wine vinegar
    • 1 tsp Dijon mustard
    • 1 garlic clove, minced
    • 1 tsp Italian seasoning
    • ½ tsp sugar (optional)
    • Salt and pepper to taste

Instructions

Step 1: Prep the Dressing
In a small bowl or jar, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, Italian seasoning, and a pinch of salt and pepper. Taste and adjust seasoning, adding a little sugar if needed for balance.

Step 2: Assemble the Salad
In a large bowl, combine the romaine lettuce, cherry tomatoes, red onion, banana peppers, mozzarella, olives, salami, and pepperoni. Toss gently to distribute the ingredients evenly.

Step 3: Toss and Serve
Pour the dressing over the salad and toss until everything is well coated. Serve immediately, or refrigerate for up to 2 hours to let the flavors meld.
