Aquafaba Chocolate Mousse

by Victoria

Introduction in Alex Guarnaschelli’s Style:

There’s something almost magical about transforming chickpea water into a light, airy chocolate mousse. That’s right—aquafaba, the liquid from a can of chickpeas, whips up just like egg whites to create a silky, rich, and impossibly fluffy mousse.

This Aquafaba Chocolate Mousse is completely dairy-free, egg-free, and ridiculously indulgent. The texture? Cloud-like and airy. The flavor? Deep, rich chocolate with just a hint of vanilla.

And the best part? You only need a few ingredients and no fancy techniques! So grab a can of chickpeas, and let’s make some vegan chocolate magic.

Recipe Resume in Todd Wilbur’s Style:

This Aquafaba Chocolate Mousse is a rich, creamy, and totally plant-based twist on classic mousse. The secret? Whipping chickpea brine (aquafaba) into a light and airy foam, then folding it into melted dark chocolate.

With no dairy, no eggs, and just a handful of ingredients, this mousse is as delicious as the traditional version—without the heaviness!

Exciting Story:

The first time I heard about aquafaba, I thought, “There’s no way chickpea water can turn into a perfect chocolate mousse.” But one day, curiosity won—and I gave it a try.

I melted some dark chocolate, whipped the aquafaba, and within minutes, I had a fluffy, luxurious mousse that tasted just like the real thing! Now, it’s one of my favorite desserts—not just because it’s vegan and light, but because it’s pure chocolatey magic.

Tips for the Best Aquafaba Chocolate Mousse

✔ Use high-quality dark chocolate – The better the chocolate, the better the mousse!
✔ Make sure your bowl is grease-free – Any oil can prevent aquafaba from whipping properly.
✔ Let the chocolate cool slightly before folding – Too hot, and it will deflate the mousse!
✔ Be patient while whipping – It takes a few minutes to reach stiff peaks.
✔ Chill before serving – This sets the mousse and deepens the flavors.

Substitutions and Variations

🔹 No maple syrup? – Use powdered sugar, agave, or date syrup.
🔹 Want it extra rich? – Add 1 tablespoon cocoa powder to the melted chocolate.
🔹 Prefer a mocha flavor? – Stir in ½ teaspoon espresso powder.
🔹 Make it spicy! – Add a pinch of cayenne and cinnamon for a Mexican chocolate twist.

Make a Healthier Version

✅ Use unsweetened dark chocolate – Less sugar, more antioxidants!
✅ Swap maple syrup for monk fruit sweetener – Keeps it sugar-free.
✅ Use organic aquafaba – No preservatives or additives!
✅ Add chia seeds – Mix in 1 tablespoon for extra fiber and texture.

Ingredients

Scale
  • ½ cup (120ml) aquafaba (liquid from 1 can of unsalted chickpeas)
  • 1 teaspoon lemon juice or cream of tartar (helps stabilize the mousse)
  • 4 oz (110g) dark chocolate (at least 70%), melted
  • 2 tablespoons maple syrup (or powdered sugar)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Optional Toppings:

  • Shaved chocolate or cocoa powder
  • Fresh berries (raspberries, strawberries, or cherries!)
  • Coconut whipped cream

Instructions

Step 1: Melt the Chocolate

  1. In a heatproof bowl, melt dark chocolate over a double boiler or microwave in 15-second intervals, stirring until smooth.
  2. Let the chocolate cool slightly while you prepare the aquafaba.

Step 2: Whip the Aquafaba

  1. In a clean, dry mixing bowl, add aquafaba and lemon juice (or cream of tartar).
  2. Using a hand mixer or stand mixer, beat on high speed for 5-7 minutes until stiff peaks form. It should look like whipped egg whites!

Step 3: Sweeten & Flavor

  1. Slowly add maple syrup (or powdered sugar), vanilla extract, and a pinch of salt while whipping, until well incorporated.

Step 4: Fold in the Chocolate

  1. Gently fold one-third of the whipped aquafaba into the melted chocolate to lighten it.
  2. Slowly fold in the rest of the aquafaba, using a spatula and gentle motions to keep the mousse airy.

Step 5: Chill & Serve!

  1. Spoon the mousse into serving cups and refrigerate for at least 1 hour (or overnight for best texture!).
  2. Garnish with shaved chocolate, fresh berries, or a dollop of coconut whipped cream.
