Ingredients

For the Salmon Meatballs:

  • 1 lb fresh salmon fillet, skin removed
  • 1/3 cup panko breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the Creamy Avocado Sauce:

  • 1 ripe avocado
  • 1/4 cup Greek yogurt or sour cream
  • Juice of 1 lime
  • 1 clove garlic, minced
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • Water, as needed for desired consistency

Instructions

  • Prepare the Salmon: Preheat your oven to 400°F (200°C). Chop the salmon finely or pulse it in a food processor until coarsely ground.
  • Mix the Ingredients: In a large bowl, combine the salmon, breadcrumbs, egg, garlic, parsley, Parmesan, lemon zest, lemon juice, salt, and pepper. Mix until just combined.
  • Form the Meatballs: Roll the mixture into 1-inch meatballs and place them on a parchment-lined baking sheet.
  • Bake: Bake for 15–18 minutes or until the meatballs are firm and slightly golden on the outside.
  • Make the Sauce: While the meatballs bake, prepare the sauce. Blend the avocado, Greek yogurt, lime juice, garlic, olive oil, salt, and pepper until smooth. Add water to reach your desired consistency.
  • Serve: Drizzle the creamy avocado sauce over the meatballs or serve on the side for dipping. Garnish with fresh parsley or additional lemon zest.
