For the Salmon Meatballs:
- 1 lb fresh salmon fillet, skin removed
- 1/3 cup panko breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup grated Parmesan cheese
- Zest of 1 lemon
- Juice of 1/2 lemon
- 1/2 tsp salt
- 1/4 tsp black pepper
For the Creamy Avocado Sauce:
- 1 ripe avocado
- 1/4 cup Greek yogurt or sour cream
- Juice of 1 lime
- 1 clove garlic, minced
- 2 tbsp olive oil
- Salt and black pepper, to taste
- Water, as needed for desired consistency
Instructions
- Prepare the Salmon: Preheat your oven to 400°F (200°C). Chop the salmon finely or pulse it in a food processor until coarsely ground.
- Mix the Ingredients: In a large bowl, combine the salmon, breadcrumbs, egg, garlic, parsley, Parmesan, lemon zest, lemon juice, salt, and pepper. Mix until just combined.
- Form the Meatballs: Roll the mixture into 1-inch meatballs and place them on a parchment-lined baking sheet.
- Bake: Bake for 15–18 minutes or until the meatballs are firm and slightly golden on the outside.
- Make the Sauce: While the meatballs bake, prepare the sauce. Blend the avocado, Greek yogurt, lime juice, garlic, olive oil, salt, and pepper until smooth. Add water to reach your desired consistency.
- Serve: Drizzle the creamy avocado sauce over the meatballs or serve on the side for dipping. Garnish with fresh parsley or additional lemon zest.
