Ingredients
Scale
For the Chicken:
- 2 lbs chicken wings or drumsticks
- 2 cups buttermilk
- 1 tsp hot sauce (optional, for marinating)
- 2 cups all-purpose flour
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp black pepper
- Oil for frying
For the Buffalo Sauce:
- 1/2 cup hot sauce (e.g., Frank’s RedHot)
- 1/4 cup unsalted butter
- 1 tbsp honey or brown sugar (optional, for a hint of sweetness)
- 1 tsp garlic powder
For Serving:
- Ranch or blue cheese dressing
- Celery sticks
- Carrot sticks
Instructions
- Marinate the Chicken:
In a large bowl, combine buttermilk and hot sauce. Add the chicken, cover, and refrigerate for at least 2 hours or overnight for maximum tenderness. - Prepare the Coating:
In a separate bowl, mix the flour, garlic powder, onion powder, smoked paprika, salt, and pepper. - Bread the Chicken:
Remove the chicken from the buttermilk, letting excess drip off. Dredge each piece in the flour mixture, pressing firmly to ensure a good coating. Repeat this process for extra crispiness. - Fry the Chicken:
Heat oil in a deep skillet or fryer to 350°F (175°C). Fry the chicken in batches for 12–15 minutes, turning occasionally, until golden brown and cooked through. Drain on paper towels. - Make the Buffalo Sauce:
In a small saucepan, melt the butter over low heat. Stir in hot sauce, garlic powder, and honey (if using). Cook for 2–3 minutes, stirring occasionally. - Coat the Chicken:
Toss the fried chicken in the buffalo sauce until evenly coated. - Serve:
Arrange the chicken on a platter with ranch or blue cheese dressing and celery sticks. Dig in while it’s hot!
