Ingredients
For the Steak
- 1 lb sirloin steak, cut into bite-sized cubes
- 2 tbsp olive oil
- 2 tbsp butter
- 3 garlic cloves, minced
- 1 tsp paprika
- 1 tsp Italian seasoning
- Salt and pepper, to taste
For the Pasta
- 12 oz fettuccine or spaghetti
- 2 tbsp butter
- 4 garlic cloves, minced
- 2 cups heavy cream
- 1 cup grated parmesan cheese
- ½ tsp nutmeg (optional)
- Salt and pepper, to taste
- ½ cup pasta water (reserved)
Garnish
- Fresh parsley, chopped
- Grated parmesan
Instructions
Bring a large pot of salted water to a boil and cook the pasta until al dente. Reserve ½ cup of pasta water before draining.
In a large skillet, heat olive oil over medium-high heat. Season the steak cubes with paprika, Italian seasoning, salt, and pepper. Sear the steak for 2-3 minutes on each side until browned. Add butter and minced garlic, stirring to coat the steak in garlic butter. Remove the steak from the pan and set aside.
In the same skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant. Pour in the heavy cream, stirring constantly. Gradually whisk in the parmesan cheese until smooth. Season with nutmeg, salt, and pepper.
Toss the cooked pasta into the cream sauce, adding reserved pasta water as needed to achieve your desired consistency.
Return the garlic steak bites to the skillet, stirring gently to combine. Let everything heat through for 1-2 minutes.
Plate the pasta, ensuring an even distribution of steak bites. Garnish with fresh parsley and extra grated parmesan. Serve immediately.
