- 1/3 cup vegetable oil
- 2 large eggs

- 2 cups powdered sugar
- 1 tsp vanilla extract
- Optional: Sprinkles or crushed freeze-dried strawberries for decoration
Instructions
- Prepare the Cookies:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix the cake mix, vegetable oil, and eggs until a soft dough forms.
- Shape and Bake:
- Scoop tablespoon-sized portions of dough and roll into balls. Place them on the baking sheet, spacing them about 2 inches apart.
- Flatten slightly with your hand or the back of a spoon. Bake for 8–10 minutes, or until the edges are set.

- Assemble the Sandwich Cookies:
- Spread or pipe a generous layer of filling onto the flat side of a cookie. Top with another cookie to form a sandwich.
