  • 1 box (15.25 oz) strawberry cake mix
  • 1/3 cup vegetable oil
  • 2 large eggs

For the Filling:

  • 1/2 cup unsalted butter, softened
  • 4 oz cream cheese, softened (optional for a tangy twist)
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • Optional: Sprinkles or crushed freeze-dried strawberries for decoration

Instructions

  • Prepare the Cookies:
    • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • In a large bowl, mix the cake mix, vegetable oil, and eggs until a soft dough forms.
  • Shape and Bake:
    • Scoop tablespoon-sized portions of dough and roll into balls. Place them on the baking sheet, spacing them about 2 inches apart.
    • Flatten slightly with your hand or the back of a spoon. Bake for 8–10 minutes, or until the edges are set.
    • Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  • Make the Filling:
    • In a mixing bowl, beat the butter (and cream cheese, if using) until smooth and creamy.
    • Gradually add powdered sugar and vanilla extract, beating until fluffy. Adjust the consistency with a splash of milk if needed.
  • Assemble the Sandwich Cookies:
    • Spread or pipe a generous layer of filling onto the flat side of a cookie. Top with another cookie to form a sandwich.
    • Optional: Roll the edges in sprinkles or crushed freeze-dried strawberries for extra flair.
  • Serve and Enjoy:
    • Serve immediately or store in an airtight container in the refrigerator for up to 3 days.
