For the Cookies:
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup chocolate chips (optional)
For the Filling:
- 1/2 cup Nutella (chilled for easier handling)
Instructions
- Prepare the Nutella Filling:
- Line a baking sheet with parchment paper. Using a small spoon or cookie scoop, drop dollops of Nutella (about 1 teaspoon each) onto the sheet. Freeze for at least 30 minutes.
- Make the Cookie Dough:
- In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Fold in chocolate chips if using.
- Assemble the Cookies:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop about 1 1/2 tablespoons of dough and flatten it in your hand. Place a frozen Nutella dollop in the center and wrap the dough around it, ensuring the Nutella is fully encased. Roll into a ball and place on the baking sheet.
- Bake the Cookies:
- Bake for 10–12 minutes, or until the edges are golden brown. The centers will still be soft.
- Allow the cookies to cool for 5 minutes on the baking sheet before transferring to a wire rack.
