For the Crust
- 1 cup graham cracker crumbs
- ¼ cup unsalted butter, melted
- 2 tbsp granulated sugar
For the Cream Cheese Filling
- 8 oz cream cheese, softened
- ¼ cup granulated sugar
- 1 tsp pure vanilla extract
- 1 large egg
For the Topping
- Fresh raspberries (about 1 pint)
- Powdered sugar for dusting (optional)
Instructions
Prepare the Crust
- Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or lightly grease it.
- In a bowl, mix the graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand.
- Press about a teaspoon of the crust mixture into the bottom of each muffin cup, packing it down firmly. Bake for 5 minutes, then set aside to cool slightly.
2. Make the Cream Cheese Filling
- In a medium bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth.
- Add the egg and mix until just combined. Avoid overmixing.
3. Assemble the Bites
- Spoon the cream cheese mixture over the pre-baked crusts, filling each cup about ¾ full.
- Gently press a raspberry into the center of each cup.
4. Bake and Cool
- Bake for 12–15 minutes, or until the cream cheese filling is set but still slightly jiggly in the center.
- Let the bites cool completely in the tin, then transfer to the refrigerator to chill for at least 2 hours before serving.
5. Serve and Enjoy
- Dust with powdered sugar if desired and serve chilled.
