Ingredients

For the Crust

  • 1 cup graham cracker crumbs
  • ¼ cup unsalted butter, melted
  • 2 tbsp granulated sugar

For the Cream Cheese Filling

  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1 large egg

For the Topping

  • Fresh raspberries (about 1 pint)
  • Powdered sugar for dusting (optional)

Instructions

Prepare the Crust

  1. Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or lightly grease it.
  2. In a bowl, mix the graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand.
  3. Press about a teaspoon of the crust mixture into the bottom of each muffin cup, packing it down firmly. Bake for 5 minutes, then set aside to cool slightly.

2. Make the Cream Cheese Filling

  1. In a medium bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth.
  2. Add the egg and mix until just combined. Avoid overmixing.

3. Assemble the Bites

  1. Spoon the cream cheese mixture over the pre-baked crusts, filling each cup about ¾ full.
  2. Gently press a raspberry into the center of each cup.

4. Bake and Cool

  1. Bake for 12–15 minutes, or until the cream cheese filling is set but still slightly jiggly in the center.
  2. Let the bites cool completely in the tin, then transfer to the refrigerator to chill for at least 2 hours before serving.

5. Serve and Enjoy

  1. Dust with powdered sugar if desired and serve chilled.
