For the Cake:
- 2 ½ cups all-purpose flour
- 2 tbsp unsweetened cocoa powder
- 1 tsp baking soda
- ½ tsp salt
- 1 ½ cups granulated sugar
- 1 cup vegetable oil
- 2 large eggs
- 1 cup buttermilk
- 2 tsp vanilla extract
- 1 tsp white vinegar
- 1–2 tbsp red food coloring
For the Cream Cheese Filling:
- 8 oz cream cheese, softened
- ½ cup powdered sugar
- 1 tsp vanilla extract
For the Chocolate Glaze:
- ½ cup heavy cream
- 4 oz semi-sweet chocolate, chopped
- 1 tbsp unsalted butter
Instructions
- Prepare the Cake Batter:
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Sift together flour, cocoa powder, baking soda, and salt in a medium bowl.
- In a large bowl, beat sugar and oil until smooth. Add eggs, one at a time, then mix in buttermilk, vanilla, vinegar, and food coloring.
- Gradually add dry ingredients to the wet mixture. Mix until just combined.
- Bake the Cake Layers:
- Divide the batter evenly between the prepared pans. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
- Make the Cream Cheese Filling:
- Beat cream cheese, powdered sugar, and vanilla until smooth and creamy.
- Assemble the Cake:
- Place one cake layer on a serving plate. Spread the cream cheese filling evenly over the top.
- Place the second cake layer on top and gently press down.
- Prepare the Chocolate Glaze:
- Heat heavy cream in a small saucepan until it just begins to simmer. Remove from heat and pour over the chopped chocolate. Let sit for 2 minutes, then stir until smooth. Mix in butter for extra shine.
- Glaze the Cake:
- Pour the chocolate glaze over the cake, letting it drip down the sides for a dramatic effect.
